No Bake Chocolate Oatmeal Cookies

Ingredients
2 c. sugar
1/2 c. milk
Pinch salt
1/2 c. peanut butter
1/2 c. cocoa
1/2 stick butter
3 c. oats
1 tsp. vanilla
Directions
Boil sugar, cocoa, milk, butter and salt for 1 minute. Remove from heat and add peanut butter and oats and vanilla. Use a tablespoon to place dough out on waxed paper. Wait for them to harden, and WA-LA!
This is probably one of the most simple things I've ever made, yet simplicity doesn't take away from its yummy taste!

Lasagna Rolls
Ingredients
* 1 cup grated parmesan (or cheddar)
* 1 1/4 cups (5 ounces) shredded mozzarella cheese
* 1 (15-ounce) carton ricotta cheese
* 1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
* 9 cooked lasagna noodles
* cooked ground beef (if desired)
* Vegetable cooking spray
* 4 (8-ounce) cans tomato sauce
* 1 teaspoon dried oregano
* 1 teaspoon dried basil
* 1/2 teaspoon garlic powder
* 1/2 teaspoon onion powder
* 1/4 teaspoon salt
* Fresh basil leaves
Directions
Combine 3/4 cup Parmesan cheese, mozzarella cheese, ricotta cheese, and beef in a large bowl, and stir well. Add spinach, and stir well.
Spread some spinach mixture on each lasagna noodle. Roll up each one. Place unsealed side face down. Arrange in a baking pan coated with cooking spray. Set aside.
Combine next 6 ingredients in a bowl, and stir well. Spoon tomato mixture over lasagna rolls. Cover and bake at 350° for 45 minutes. Uncover; top with remaining 1/4 cup Parmesan cheese, and bake an additional 10 minutes. Garnish with fresh basil leaves, if desired.
I got this recipe from my sister. It's one of my all time favorites. It's simple and delicious! A must have! :)

Tuna Casserole
Ingredients
* 1 package of elbow macaroni
* 2 (6 ounce) cans tuna, drained
* 1/3 cup sour cream
* 1 can of peas
* 1/2 cup mayonnaise
* 1/2 teaspoon dried thyme
* 1/4 teaspoon salt
* 1 cup shredded Monterey Jack cheese (any cheese of your preference works)
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
2. Bring a large pot of salted water to a boil, add macaroni, and cook until soft; drain.
3. In a large mixing bowl, combine macaroni, tuna, and peas Stir in sour cream and mayonnaise. Season with salt and thyme. Pour into prepared casserole dish. Top with with cheese.
4. Bake in preheated oven for 30 minutes, or until hot and bubbly.
This recipe's one of my families favorites, :) they ask me to make it all the time.

Chicken Do Piaza
Chicken Do Piaza: Chicken with 2 or double the amount of onions
Ingredients
1 chicken, cut into pieces
1 lg. onion, finely sliced
1-2 T. oil
4 tomatoes, chopped (used big can)
4 green chilies (definitely did not use this much :) used half of 1 haha)
1tsp. red chili powder
6 curry leaves
1/2 tsp. turmeric powder
1 T. ginger/garlic paste
1/4 tsp. cinnamon powder
salt to taste
Heat the cooking oil in a pan and fry the onions until they change color, about light golden. Remove with a slotted spoon and set aside. Stir-fry the chicken, with ginger/garlic paste and salt. As soon as the liquid from the chicken dries, add the red chili powder, turmeric powder, cinnamon powder, the fried onions, tomatoes, green chilies, and curry leaves. Cook on low heat for about 10 minutes, adding small amounts of water from time to time to prevent scorching. When the oil separates from the curry the Do-piaza is ready! This Pakistani dish turned out to be scrumptious. Being Middle-eastern, my family and I had it with white rice. Enjoy!

Spanish Omelette

Ingredients
2 baked potatoes, diced
2 c. eggs
1 large tomato, seeded and diced
2 Tbsp. minced fresh parsley
2 cloves garlic, minced
1 tsp olive oil
1 large oinoin, minced
2 tsp margarine or butter
In a large non-sick frying pan over medium head, cook the potatoes, onions, tomatoes, parsley and garlic in the oil until most of the liquid has evaporated from the tomatoes. This takes awhile if you didn't bake the potatoes beforehand (what I did). Trasfer toa large bowl and stir in eggs. Let a frying pan (either clean up the one you just used, or another one), sit over medium-high head for 2 minutes. Add 1 tsp butter and swirl. Add half of the egge mixture; life and rotate pan so that eggs are evenly distributes. As the eggs set around teh edges, lift them to allow uncooked portions flow underneath. Turn the heat to low, cover the apan and cook until the top is set. Slide this into a serving plate, cut into wedges, and serve! :) (Repeat with the other half of the mixture)
Makes 4 servings.
